WW Chicken Salad with Walnuts and Grapes

So today with all my last-week-of-freedom-before-I-start-my-new-job time I decided to share a delicious and healthy Weight Watchers recipe I discovered. Here it is... 

1/4 C plain fat free yogurt
1/4 C fat-free mayonnaise
1/4 tsp ginger root
6 oz roasted chicken breast, without skin, cubed
2 medium scallions
1/4 C red seedless grapes, quartered
1/4 C celery, chopped
1/4 C carrots, raw and shredded
1 tsp chopped walnuts
1/4 C green apple, peeled and chopped (not originally in the recipe, but I love the addition)


 Here are all my yummy ingredients ready to combine and consumed. 

Mix mayonnaise, yogurt, and ginger together. Pour over chicken and stir until coated. Add remaining ingredients to chicken mixture. Annnnnnnnd voila! Serve over a bed of greens (that's how I like it), pita, bread, etc. Whatever your heart desires :) Makes 4 servings, 3 points each.

And let's be proud of me for blogging twice in one week. What??? That's unheard of. Maybe this is a new chapter of my blogging life? TBD....
